1. Assessment & Magnification

Before a stone ever touches your blade, we analyze it. We look for micro-chips, rolled edges, and the current bevel angle. We use magnification on the edge to see exactly what's happening at a microscopic level. This ensures we apply the absolute best solution for your specific knife, removing only the material necessary.

2. The Grind

Depending on the damage and steel hardness, we progress through a series of Japanese water stones. We establish a new, clean apex.

3. Polishing & Honing

We refine the edge with high-grit stones to polish the bevel, followed by leather stropping to remove the burr. The result is a mirror-finish edge that glides effortlessly through ingredients.
